Papaya salad with shrimp

For 4 persons

1 small green papaya, unripe
300g prawns
1 tablespoon fried onions (ready for use in Asian supermarkets)
1 bunch fresh mint
1 bunch cilantro
1 tablespoon roasted peanuts, unsalted, ground
1 lemon
1 small red pepper (if you like strong saviors )
½ tablespoon fish sauce
1 teaspoon sugar
1 tablespoon vinegar
1 pinch pepper
1 clove garlic
1 tablespoon soybean oil

As a starter or side dish

1. Peel papaya, wash – and shred – the part with the roughest side of the grater.
2. Steam the shrimps or plunge them into boiling water for  8 minutes. Peal them and remove the black intestinal canal.
3. Squeeze the lemon and mix the juice with the finely chopped red pepper, sugar, pressed garlic  and fish sauce. Mix it all together until the sugar is melted.
4. Combine the papaya with this dressing and divide into  4 plates. Garnish with shrimp and sprinkle with peanuts, fried onions, chopped mint and coriander.
